浸泡
选取外观完整的绿豆,分别在 20℃、30℃、40℃和50℃下恒温水浴下浸泡 2h、4h、6h、8h、10h、12h、14h 和 16h,浸泡的目的是在冷冻干燥前使绿豆内部吸水,得到较好的冻干品质。浸泡后考察绿豆的吸水率和破裂率,结果如图 7-10 和图 7-11所示。
由图 7-10和图7-11可知,浸泡时间愈长,绿豆吸水率愈高,一定时间后,绿豆充分吸水,吸水率增长速率变慢。当绿豆细胞壁与内部细胞完全吸水后,在后续处理过程中可达到良好的效果。温度愈高,吸水率愈高,是因为加热可使植物组织软化膨胀,同时水的表面张力下降,使水进人内部的阻力减小,有利于水进入绿豆内部。因速煮绿豆产品应保持良好外观,且后续处理过程也对产品外观有所影响,除吸水率外,应同时考虑绿豆种皮破裂程度。实验表明,40℃浸泡6h 时绿豆形态完整且吸水率良好,因此绿豆最佳浸泡工艺为:40℃恒温水浴中浸泡6h。

预冻
预冻的目的是将绿豆内的水分固化,并使其冻干前后具有相同的形态,防止在升华、解析过程由于抽真空而发生起泡、浓缩、收缩和溶质移动等不良变化的发生。最佳条件下浸泡后,在预冻时间4h、升华干燥时间30h、解析干燥时间10h不变的条件下,分别在预冻温度-35℃,-45℃,-55℃,-65℃,-75℃,-85℃和-95℃,再经升华干燥和解析干燥,随后测定冻干绿豆的复水时间和复水比,测定结果如图7-12所示。
由图7-12可知,在-35℃时,复水时间长是因为慢冻时,物料内形成的冰晶较大,当外部冰晶升华后,留下大面积连续的升华通道,有利于内部冰晶的升华,从而使制品升华速度加快,但慢冻产生的大冰晶造成细胞壁及各级宏观、微观固体支撑结构的严重机械性破坏,造成大多数细胞严重收缩而死亡,使得中心结构不能保持原有的状态,导致最终产品复水时间长、复水比降低。而速冻冻结速度快,在细胞内部和细胞间隙生成小冰晶,对细胞的机械损坏作用小,同时细胞内部的溶质迁移效应小,干燥后产品能保持原有的结构。在-75℃时绿豆复水时间显著减少且破裂率较低,复水品质也较为良好,同时能源消耗较少,综合上述因素,应选择-75℃作为绿豆预冻温度。

升华干燥
升华干燥是将冻结的自由水直接升华成水蒸气。实验中选择升华干燥温度-25℃,-30℃,-35℃,-40℃,-45℃,-50℃和-55℃,考查升华温度对绿豆复水比和复水时间的影响,结果如图7-13 所示。
由图7-13 可以看出,随着升华干燥温度降低,绿豆复水时间相应减少,绿豆复水比随着升华干燥温度的降低而增加。在冷冻干燥过程中,相同条件下升华干燥温度越低,升华干燥过程中豆类中心温度越低,其升华干燥所需时间越长,但其内部结构和外观变化较小。在-40℃后,虽复水时间略有下降,复水比略有增加,但因-40℃节省能源、节约时间又能达到较好的冻干效果,应选择-40℃作为绿豆的升华干燥温度。

解析干燥
冰升华完毕后,制品含水量降至 10%左右,一般吸附在干燥物质的毛细管璧和极性基团上,属未冻结水,这些水分将为微生物的生长繁殖和某些化学反应提供条件。因此,解析过程就是要让吸附在干燥物质内部的水分子解析出来,达到进一步降低制品水分含量的目的,以确保制品长期贮存的稳定性。在解析干燥阶段,产品的温度应足够高,只要不造成产品热变性即可。实验中考查了解析干燥温度为 30℃,40℃,50℃,60℃,70℃,80℃和90℃条件下,解析干燥温度对冻干绿豆的复水比和复水时间的影响,如图 7-14 所示。由图7-14可知,将解析温度提高至80C及以上时,绿豆破裂率高且感官评分低,70℃时绿豆复水性能良好,外观品质及复水后感官品质好,因此选择70℃作为绿豆冷冻干燥工艺的解析干燥温度。实验中,绿豆含水量质量分数在 0.5%~1%之间,且保持了良好的感官品质和营养品质。
经上述实验研究,得到速煮绿豆的冻干优化工艺为:40℃浸泡6h,-75℃预冻4h,-40℃升华干燥 30h,70℃解析干燥 10h。经过该优化工艺处理过的绿豆,复水后色泽与未处理绿豆相比略浅但颜色自然、颗粒饱满,与未处理绿豆直接熟制破损程度相近。此优化工艺处理的绿豆能够实现与大米共煮同熟,外观尚好,口感适宜。
